Instructions

  • Preheat grill to medium-high heat.
  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Fluff with a fork and set aside.
  • While the quinoa is cooking, prepare the pesto sauce. In a food processor, combine the basil, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped. With the processor running, slowly pour in the olive oil until the mixture is smooth. Season with salt and pepper to taste.
  • Season the chicken breasts with salt and pepper. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • To serve, spoon the cooked quinoa onto plates, top with a grilled chicken breast, and drizzle with the pesto sauce.
