Ingredients
- 1 pound of boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 bell peppers, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 8 oz of cherry tomatoes
- 1/4 cup of olive oil
- 2 tablespoons of balsamic vinegar
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1/2 cup of unsalted butter
- 4 cloves of garlic, minced
- 1 tablespoon of chopped fresh parsley
Instructions
- In a bowl, combine 1/4 cup of olive oil, 2 tablespoons of balsamic vinegar, 2 cloves of minced garlic, 1 teaspoon of dried oregano, and salt and pepper to taste. Add the chicken cubes to the bowl and marinate for at least 20 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes, bell peppers, red onion, and cherry tomatoes onto skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- In a small saucepan, melt 1/2 cup of unsalted butter over low heat. Add 4 cloves of minced garlic and cook for 1-2 minutes until fragrant. Stir in 1 tablespoon of chopped fresh parsley and remove from heat.
