Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup couscous
- 1 1/2 cups chicken broth
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon chopped fresh parsley
- 1 lemon, cut into wedges
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix together 1 tablespoon olive oil, paprika, garlic powder, 1/2 teaspoon salt, and black pepper. Rub the mixture over the chicken breasts.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let it rest for 5 minutes before slicing.
- In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the red and yellow bell peppers, zucchini, and red onion. Cook for 5-6 minutes, or until the vegetables are tender-crisp.
- Stir in the balsamic vinegar and remaining 1/2 teaspoon of salt. Cook for an additional 2 minutes, then remove from heat.
- To assemble the bowls, divide the couscous among 4 bowls. Top with the grilled chicken slices and sautéed vegetables. Sprinkle with chopped parsley and serve with lemon wedges.
