  • Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let it rest for 5 minutes before slicing.
  • In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the red and yellow bell peppers, zucchini, and red onion. Cook for 5-6 minutes, or until the vegetables are tender-crisp.
