Grilled Chicken and Mozzarella Panini

Ingredients
- 2 boneless, skinless chicken breasts
- 4 slices of ciabatta bread
- 4 slices of mozzarella cheese
- 1/4 cup of sun-dried tomatoes
- 1/4 cup of basil leaves
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Season the chicken breasts with salt and pepper, then drizzle with 1 tablespoon of olive oil. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for 5 minutes before slicing.
- Brush one side of each slice of ciabatta bread with the remaining olive oil. Place 2 slices of mozzarella cheese on the other side of the bread. Divide the sliced grilled chicken, sun-dried tomatoes, and basil leaves evenly between two slices of bread. Top with the remaining mozzarella slices and the other slices of bread, oiled side up.
- Place the sandwiches on the grill or grill pan and cook for 3-4 minutes on each side, pressing down with a spatula, until the bread is golden brown and the cheese is melted.
- Remove the panini from the grill, slice in half, and serve hot. Enjoy!
