Ingredients
- 2 boneless, skinless chicken breasts
- 2 ripe mangoes, peeled and diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon honey
- Salt and pepper to taste
- 6 cups mixed salad greens
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for 5-6 minutes on each side, or until fully cooked. Remove from grill and let it rest for 5 minutes.
