  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled

Instructions

  • Preheat grill to medium-high heat.
  • Season the chicken breasts with salt and pepper.
  • Grill the chicken for 6-7 minutes per side, or until cooked through. Remove from grill and let rest for 5 minutes before slicing.
  • In a medium saucepan, bring the chicken broth to a boil. Add the farro, reduce heat to low, cover, and simmer for 15-20 minutes, or until the farro is tender. Drain any excess liquid and let cool.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
  • In a large bowl, combine the cooked farro, cherry tomatoes, cucumber, red onion, and parsley. Toss with the dressing.
  • Divide the farro salad among 4 plates. Top each with sliced grilled chicken and crumbled feta cheese.
