Instructions

  • In a saucepan, combine 1 cup of whole milk and 1/2 cup of granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the milk is hot but not boiling.
  • In a separate bowl, whisk together 4 large egg yolks. Slowly pour the hot milk mixture into the egg yolks, whisking constantly to temper the eggs.
  • Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Do not let it boil.
  • Remove the mixture from the heat and whisk in 2 tablespoons of matcha green tea powder until smooth. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.
  • Stir in 2 cups of heavy cream. Cover the bowl with plastic wrap, pressing it directly onto the surface of the mixture to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
  • Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  • Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours, or until firm.
  • Scoop and serve the green tea ice cream, and enjoy!
