Greek Gyros

Ingredients
- 1 lb of lamb, thinly sliced
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- 1 tsp of dried oregano
- 1/2 tsp of dried thyme
- Salt and pepper to taste
- 4 pita bread rounds
- 1 tomato, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup of shredded lettuce
- 1/2 cup of crumbled feta cheese
- 1 cup of Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp of fresh dill, chopped
- 1 tbsp of lemon juice
- 1 tbsp of olive oil
Instructions
- In a bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper. Add the thinly sliced lamb and toss to coat. Let it marinate for at least 20 minutes.
- While the lamb is marinating, prepare the tzatziki sauce. In another bowl, mix together the Greek yogurt, grated and drained cucumber, chopped dill, lemon juice, and olive oil. Season with salt and pepper to taste. Refrigerate until ready to use.
- Heat a grill or grill pan over medium-high heat. Grill the marinated lamb slices for 3-4 minutes on each side, or until cooked to your desired doneness. Remove from the grill and let it rest for a few minutes.
- Warm the pita bread rounds on the grill for about 1 minute on each side.
- To assemble the gyros, place a few slices of grilled lamb on each pita bread round. Top with sliced tomato, red onion, shredded lettuce, crumbled feta cheese, and a generous dollop of tzatziki sauce.
- Fold the pita bread over the filling to form a wrap. Serve the gyros immediately, and enjoy!
