  • 1/2 cup water

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the tomatoes and bell peppers. Scoop out the seeds and flesh from the tomatoes and peppers, leaving a shell. Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a shell. Chop the flesh of the vegetables and set aside.
  • In a large skillet, heat 1/4 cup of olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  • Add the ground beef and lamb to the skillet, and cook until browned. Drain any excess fat.
  • Stir in the chopped vegetable flesh and cook for 5 minutes. Remove from heat and stir in the cooked rice, parsley, mint, and oregano. Season with salt and pepper.
  • Stuff the tomatoes, peppers, and zucchinis with the meat and rice mixture, and place them in a baking dish. Drizzle with the remaining 1/4 cup of olive oil and pour the water into the bottom of the dish.
  • Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the tops are slightly browned.
  • Serve the Greek Gemista hot, and enjoy!
