Created by: Howcan Team
Ingredients
- 6 large tomatoes
- 3 green bell peppers
- 3 yellow bell peppers
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1 cup of long-grain rice
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh dill, chopped
- 1/4 cup of olive oil
- 1/2 teaspoon of dried oregano
- Salt and pepper to taste
- 1 cup of vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and peppers and scoop out the seeds and membranes. Set aside.
- In a large bowl, combine 1 cup of rice, chopped onion, minced garlic, parsley, dill, olive oil, dried oregano, salt, and pepper.
- Stuff the hollowed-out tomatoes and peppers with the rice mixture, filling them to the top.
- Place the stuffed vegetables in a deep baking dish, arranging them snugly to prevent them from tipping over.
- Pour 1 cup of vegetable broth into the bottom of the baking dish to keep the vegetables moist during cooking.
- Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the vegetables are tender and the rice is fully cooked.
- Serve the gemista hot or at room temperature, drizzled with a little extra olive oil if desired.
Greek Gemista, also known as stuffed vegetables, is a traditional Greek dish dating back to ancient times. It consists of hollowed-out vegetables such as tomatoes, bell peppers, and zucchinis, filled with a flavorful mixture of rice, herbs, and sometimes ground meat. The dish is then baked until the vegetables are tender and the filling is cooked to perfection. This classic Greek dish is a staple in Mediterranean cuisine and is often enjoyed during the summer months when fresh produce is abundant. Chefs and home cooks alike take pride in perfecting the balance of flavors and textures in their Gemista, making it a beloved and versatile dish across Greece. For the best version of this dish, head to the tavernas and family-run restaurants in the regions of Crete, Santorini, and Athens, where you can savor the authentic flavors of Greek Gemista. The key to a delicious Gemista lies in using ripe, juicy tomatoes, fragrant herbs like oregano and mint, and high-quality olive oil. For a twist on the traditional recipe, some cooks add a sprinkle of feta cheese or pine nuts to elevate the dish to new heights. Whether enjoyed as a main course or a side dish, Greek Gemista is a true celebration of the vibrant flavors of the Mediterranean.
