Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the tomatoes and peppers and scoop out the seeds and membranes. Set aside.
  • In a large bowl, combine 1 cup of rice, chopped onion, minced garlic, parsley, dill, olive oil, dried oregano, salt, and pepper.
  • Stuff the hollowed-out tomatoes and peppers with the rice mixture, filling them to the top.
  • Place the stuffed vegetables in a deep baking dish, arranging them snugly to prevent them from tipping over.
  • Pour 1 cup of vegetable broth into the bottom of the baking dish to keep the vegetables moist during cooking.
  • Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
  • Remove the foil and continue baking for an additional 15 minutes, or until the vegetables are tender and the rice is fully cooked.
  • Serve the gemista hot or at room temperature, drizzled with a little extra olive oil if desired.
