Ingredients
- 6 large tomatoes
- 3 green bell peppers
- 3 yellow bell peppers
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1 cup of long-grain rice
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh dill, chopped
- 1/4 cup of olive oil
- 1/2 teaspoon of dried oregano
- Salt and pepper to taste
- 1 cup of vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and peppers and scoop out the seeds and membranes. Set aside.
- In a large bowl, combine 1 cup of rice, chopped onion, minced garlic, parsley, dill, olive oil, dried oregano, salt, and pepper.
- Stuff the hollowed-out tomatoes and peppers with the rice mixture, filling them to the top.
- Place the stuffed vegetables in a deep baking dish, arranging them snugly to prevent them from tipping over.
- Pour 1 cup of vegetable broth into the bottom of the baking dish to keep the vegetables moist during cooking.
- Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the vegetables are tender and the rice is fully cooked.
- Serve the gemista hot or at room temperature, drizzled with a little extra olive oil if desired.
