Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/2 cup crumbled feta cheese
- 1/2 cup chopped spinach
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup chopped Kalamata olives
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the broiler in your oven.
- In a large bowl, whisk together 6 large eggs and 1/4 cup of milk until well combined.
- Stir in 1/2 cup crumbled feta cheese, 1/2 cup chopped spinach, 1/4 cup chopped sun-dried tomatoes, 1/4 cup chopped Kalamata olives, 1/4 cup chopped red onion, 2 tablespoons chopped fresh parsley, 1/2 teaspoon dried oregano, and salt and pepper to taste.
- Heat 2 tablespoons of olive oil in a 10-inch ovenproof skillet over medium heat. Pour the egg mixture into the skillet and cook for 5-7 minutes, or until the edges are set but the center is still slightly runny.
- Place the skillet under the broiler and broil for 3-5 minutes, or until the top is set and golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving. Enjoy your Greek frittata!
