Instructions

  • Preheat the broiler in your oven.
  • In a large bowl, whisk together 6 large eggs and 1/4 cup of milk until well combined.
  • Stir in 1/2 cup crumbled feta cheese, 1/2 cup chopped spinach, 1/4 cup chopped sun-dried tomatoes, 1/4 cup chopped Kalamata olives, 1/4 cup chopped red onion, 2 tablespoons chopped fresh parsley, 1/2 teaspoon dried oregano, and salt and pepper to taste.
  • Heat 2 tablespoons of olive oil in a 10-inch ovenproof skillet over medium heat. Pour the egg mixture into the skillet and cook for 5-7 minutes, or until the edges are set but the center is still slightly runny.
  • Place the skillet under the broiler and broil for 3-5 minutes, or until the top is set and golden brown.
  • Remove from the oven and let it cool for a few minutes before slicing and serving. Enjoy your Greek frittata!
