  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup Greek vinaigrette dressing

  • While the quinoa is cooking, season the chicken pieces with dried oregano, dried thyme, garlic powder, salt, and pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken pieces and cook for 6-8 minutes, or until fully cooked and golden brown. Remove from heat and set aside.
  • In a large bowl, combine the cooked quinoa, cooked chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and chopped parsley. Toss to combine.
  • Drizzle the Greek vinaigrette dressing over the quinoa mixture and toss again to coat everything evenly.
  • Divide the Greek chicken quinoa mixture into 4 serving bowls and serve immediately. Enjoy!
