Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of long-grain white rice
- 1 1/2 cups of chicken broth
- 1/2 cup of diced tomatoes
- 1/4 cup of sliced Kalamata olives
- 1/4 cup of crumbled feta cheese
- 1/4 cup of chopped fresh parsley
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of dried oregano
- 1 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 375 degrees F.
- In a large bowl, mix together 1 tablespoon of olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper.
- Add the chicken breasts to the bowl and toss to coat them evenly with the marinade.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 3-4 minutes on each side until golden brown.
- Remove the skillet from the heat and transfer the chicken to a plate.
- In the same skillet, add the rice, chicken broth, diced tomatoes, and Kalamata olives. Stir to combine.
- Place the browned chicken breasts on top of the rice mixture in the skillet.
- Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
- Remove the skillet from the oven and let it rest for 5 minutes.
- Sprinkle the crumbled feta cheese and chopped parsley over the chicken and rice before serving.
