Ingredients
- 2 cups masa harina
- 1 1/4 cups warm water
- 1/2 teaspoon salt
- 1/2 pound ground beef
- 1/2 onion, diced
- 1/2 bell pepper, diced
- 1 cup refried beans
- 1 cup shredded lettuce
- 1/2 cup crumbled queso fresco
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions
- In a large bowl, mix 2 cups of masa harina with 1 1/4 cups of warm water and 1/2 teaspoon of salt to form a smooth dough.
- Divide the dough into 6 equal portions and shape each into a thick disk.
- Heat a griddle or skillet over medium-high heat.
- Place the masa disks on the hot griddle and cook for 2-3 minutes on each side, until lightly browned and puffed.
- In a separate skillet, cook 1/2 pound of ground beef with diced onion and bell pepper until the meat is browned and the vegetables are tender.
- To assemble the gorditas, slice each masa disk in half horizontally to form a pocket.
- Spread 2 tablespoons of refried beans inside each pocket, then fill with the cooked ground beef mixture.
- Top with shredded lettuce, crumbled queso fresco, sour cream, and salsa.
- Serve immediately and enjoy!
