Instructions

  • In a large bowl, mix 2 cups of masa harina with 1 1/4 cups of warm water and 1/2 teaspoon of salt to form a smooth dough.
  • Divide the dough into 6 equal portions and shape each into a thick disk.
  • Heat a griddle or skillet over medium-high heat.
  • Place the masa disks on the hot griddle and cook for 2-3 minutes on each side, until lightly browned and puffed.
  • In a separate skillet, cook 1/2 pound of ground beef with diced onion and bell pepper until the meat is browned and the vegetables are tender.
  • To assemble the gorditas, slice each masa disk in half horizontally to form a pocket.
  • Spread 2 tablespoons of refried beans inside each pocket, then fill with the cooked ground beef mixture.
  • Top with shredded lettuce, crumbled queso fresco, sour cream, and salsa.
