  • 1/2 cup of rice vinegar
  • 3 tablespoons of sugar
  • 1 teaspoon of salt
  • 1/2 pound of fresh tuna, sliced into strips
  • 1/2 pound of fresh salmon, sliced into strips
  • 1/4 cup of spicy mayo
  • 1/4 cup of sriracha sauce
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 tablespoon of black sesame seeds

Instructions

  • In a small bowl, mix 1/2 cup of rice vinegar, 3 tablespoons of sugar, and 1 teaspoon of salt until the sugar is dissolved. Pour the mixture over 2 cups of cooked sushi rice and mix well to combine. Let the rice cool to room temperature.
  • Lay a bamboo sushi mat on a clean surface and place a sheet of nori on top, shiny side down. Wet your hands with water and spread 1/2 cup of sushi rice evenly over the nori, leaving a 1-inch border at the top.
  • Place a few strips of tuna and salmon, along with some avocado and cucumber, in the center of the rice. Drizzle with spicy mayo and sriracha sauce.
  • Using the bamboo mat, roll the sushi tightly, starting from the bottom and rolling towards the top. Seal the edge with a little water. Repeat with the remaining nori and ingredients.
  • Sprinkle the top of each roll with black sesame seeds and slice into 6 pieces using a sharp knife.
  • Serve the Godzilla rolls with soy sauce, pickled ginger, and wasabi. Enjoy!
