Ingredients
- 1 lb gnocchi
- 1 cup basil pesto
- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt and pepper, then drizzle with 1 tbsp of olive oil. Grill for 6-7 minutes per side, or until fully cooked. Remove from grill and let rest for 5 minutes before slicing into strips.
- While the chicken is grilling, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Drain and set aside.
- In a large skillet, heat the remaining 1 tbsp of olive oil over medium heat. Add the cooked gnocchi and sauté for 2-3 minutes, or until lightly golden.
