  • While the chicken is grilling, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Drain and set aside.
  • In a large skillet, heat the remaining 1 tbsp of olive oil over medium heat. Add the cooked gnocchi and sauté for 2-3 minutes, or until lightly golden.
  • Add the basil pesto to the skillet with the gnocchi and toss to coat evenly. Cook for an additional 2-3 minutes, stirring occasionally.
  • Divide the gnocchi and pesto mixture among serving plates. Top with the grilled chicken strips and sprinkle with grated Parmesan cheese.
