Instructions

  • In a food processor, combine 1 cup of basil leaves, 1/2 cup of Parmesan cheese, 1/4 cup of pine nuts, and 2 cloves of garlic. Pulse until finely chopped.
  • With the food processor running, slowly pour in 1/2 cup of extra virgin olive oil until the mixture is smooth. Season with salt and pepper to taste.
  • Add 1 lb of gnocchi to the boiling water and cook according to package instructions, usually about 2-3 minutes until they float to the surface.
  • Drain the gnocchi and return them to the pot. Add the pesto sauce and toss to coat the gnocchi evenly.
  • Transfer the gnocchi pesto to serving plates and sprinkle with additional grated Parmesan cheese and pine nuts before serving.
