Ingredients
- 1 1/2 cups mashed sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon salt

- 1/4 teaspoon ground nutmeg
- 2 eggs
- 1 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 9-inch gluten-free pie crust
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine 1 1/2 cups mashed sweet potatoes, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg.
- In a separate bowl, beat 2 eggs and mix in 1 cup evaporated milk and 1 teaspoon vanilla extract.
- Gradually add the egg mixture to the sweet potato mixture, stirring until well combined.
- Pour the filling into the gluten-free pie crust.
- Bake at 425°F (220°C) for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 40-45 minutes, or until the pie is set and a knife inserted near the center comes out clean.
