Ingredients
- 8 oz gluten-free spaghetti
- 1 lb ground turkey
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- In a large bowl, combine the ground turkey, gluten-free breadcrumbs, Parmesan cheese, chopped parsley, egg, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until well combined, then shape the mixture into meatballs, about 1 inch in diameter.
- In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Cook until softened, about 3-4 minutes.
- Add the crushed tomatoes, dried oregano, dried basil, and red pepper flakes to the skillet. Season with salt and pepper to taste. Bring the sauce to a simmer.
- Return the meatballs to the skillet, spooning some of the sauce over them. Cover and simmer for 15-20 minutes, or until the meatballs are cooked through.
- While the meatballs are simmering, cook the gluten-free spaghetti according to the package instructions. Drain and set aside.
- To serve, place a portion of the cooked spaghetti on each plate, top with the turkey meatballs and sauce. Garnish with fresh basil leaves.
