  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of cornstarch
  • 1/4 cup of vegetable broth
  • 1 tablespoon of fresh ginger, minced
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 carrot, sliced
  • 1/2 cup of snap peas
  • 2 green onions, chopped
  • Cooked rice or noodles for serving

  • 1 cup of broccoli florets
  • 1 carrot, sliced
  • 1/2 cup of snap peas
  • 2 green onions, chopped
  • Cooked rice or noodles for serving

Instructions

  • In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Set aside.
  • In a large non-stick skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the cubed tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add 1 tablespoon of oil and sauté 1 tablespoon of minced ginger and 2 cloves of minced garlic for 1-2 minutes until fragrant.
  • Add the sliced bell pepper, broccoli florets, sliced carrot, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Pour in 1/4 cup of vegetable broth and the soy sauce mixture. Stir well to combine and allow the sauce to thicken, about 2-3 minutes.
  • Add the crispy tofu back to the skillet and toss to coat with the sauce and vegetables.
  • Sprinkle with chopped green onions and serve the ginger soy tofu stir-fry over cooked rice or noodles. Enjoy!
