  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 1/2 cup chicken broth
  • 2 green onions, sliced
  • Cooked rice, for serving

Instructions

  • In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce, oyster sauce, and cornstarch. Mix well and set aside to marinate for 10 minutes.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry for 3-4 minutes until cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for 1 minute until fragrant.
  • Add the sliced red bell pepper and snap peas to the skillet, and stir-fry for 2-3 minutes until slightly tender.
  • Return the cooked chicken to the skillet. Pour in the chicken broth and remaining tablespoon of soy sauce. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
  • Sprinkle with sliced green onions and serve the ginger garlic chicken stir-fry over cooked rice. Enjoy!
