Ingredients
- 1 lb mixed seafood (shrimp, squid, mussels)
- 2 cups coconut milk
- 1 cup water
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 thumb-sized ginger, julienned
- 2 cups mixed vegetables (green beans, eggplant, squash)
- 2-3 pieces red chili peppers (optional)
- 2 tablespoons fish sauce
- 1 tablespoon cooking oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the cooking oil over medium heat.
- Sauté the garlic, onion, and ginger until fragrant.
- Add the mixed seafood and cook for 2-3 minutes.
- Pour in the coconut milk and water. Bring to a simmer and let it cook for 5 minutes.
- Add the mixed vegetables and red chili peppers. Cook for another 5-7 minutes or until the vegetables are tender.
- Season with fish sauce, salt, and pepper to taste.
- Serve hot with steamed rice and enjoy!
