Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1/2 cup sliced carrots
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 3 tablespoons brown sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 teaspoon sesame seeds (optional)
- Cooked rice, for serving
Instructions
- Press the tofu between paper towels to remove excess moisture, then cut into cubes.
- Coat the tofu cubes in 1/4 cup of cornstarch, shaking off any excess.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the coated tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the broccoli, bell peppers, and carrots. Cook for 3-4 minutes, or until the vegetables are slightly tender.
- Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes.
- In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons hoisin sauce, 2 tablespoons rice vinegar, and 3 tablespoons brown sugar. Pour the sauce into the skillet with the vegetables.
- Stir in the cornstarch-water mixture and bring the sauce to a simmer. Cook for 2-3 minutes, or until the sauce thickens.
- Add the cooked tofu back into the skillet and toss to coat with the sauce and vegetables.
