Ingredients
- 2 pounds of small red potatoes, quartered
- 3 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of dried rosemary
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 400 degrees F.
- In a large bowl, toss 2 pounds of quartered red potatoes with 3 tablespoons of olive oil, 4 cloves of minced garlic, 1 teaspoon of dried rosemary, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 35-40 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender on the inside.
