Ingredients
- 1 lb chicken tenders
- 1 cup grated parmesan cheese
- 1/2 cup panko breadcrumbs
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, mix together 1 cup grated parmesan cheese, 1/2 cup panko breadcrumbs, 2 cloves minced garlic, 1/4 cup chopped fresh parsley, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Place 1/4 cup all-purpose flour in another shallow dish, and beat 2 eggs in a third shallow dish.
- Dredge each chicken tender in the flour, then dip into the beaten eggs, and finally coat with the parmesan mixture, pressing gently to adhere.
- Place the coated chicken tenders on the prepared baking sheet. Drizzle with 2 tablespoons of olive oil.
- Bake for 18-20 minutes, or until the chicken is cooked through and the crust is golden and crispy.
