Instructions

  • Place the chicken leg quarters in a roasting pan and rub the garlic herb mixture all over the chicken.
  • Roast the chicken in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  • While the chicken is roasting, place the cubed potatoes and 2 cloves of minced garlic in a pot and cover with water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
  • Drain the potatoes and garlic, then return them to the pot. Add the milk, butter, and salt and pepper to taste. Mash the potatoes until smooth and creamy.
  • Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving.
