Garlic Herb Roasted Chicken with Garlic Mashed Potatoes

Ingredients
- 4 chicken leg quarters
- 6 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 pounds of potatoes, peeled and cubed
- 1/2 cup of milk
- 4 tablespoons of butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 4 cloves of minced garlic, 2 tablespoons of olive oil, chopped rosemary, chopped thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Place the chicken leg quarters in a roasting pan and rub the garlic herb mixture all over the chicken.
- Roast the chicken in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
- While the chicken is roasting, place the cubed potatoes and 2 cloves of minced garlic in a pot and cover with water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
- Drain the potatoes and garlic, then return them to the pot. Add the milk, butter, and salt and pepper to taste. Mash the potatoes until smooth and creamy.
- Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving.
