Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 cup wild rice
- 2 tablespoons chopped fresh parsley
Instructions
- In a large bowl, mix together 1/4 cup of olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
- Add the chicken breasts to the bowl and coat them evenly with the herb mixture. Let them marinate for at least 15 minutes.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the marinated chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through.
- In a separate pot, bring 2 cups of chicken broth to a boil. Add 1 cup of wild rice, reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and the liquid is absorbed.
- Once the chicken is cooked and the rice is ready, serve the chicken over the wild rice, and garnish with chopped fresh parsley.
