Garlic Ginger Tofu Stir-fry with Broccoli and Carrots

Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 1 cup of sliced carrots
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of sesame oil
- 2 tablespoons of vegetable oil
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Cooked rice or noodles for serving
- Sesame seeds and sliced green onions for garnish
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of hoisin sauce, 1 tablespoon of rice vinegar, 1 tablespoon of sesame oil, 1 tablespoon of cornstarch, and 1/4 cup of water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for 1-2 minutes until fragrant.
- Add the broccoli and carrots to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
- Return the tofu to the skillet and pour the prepared sauce over the tofu and vegetables. Stir-fry for another 2-3 minutes until the sauce thickens and coats everything evenly.
- Remove from heat and serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds and sliced green onions. Enjoy!
