Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1/4 cup of unsalted butter, melted
- 4 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 cups of mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes), chopped
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of dried rosemary
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- In a small bowl, mix together 1/4 cup of melted butter, 4 cloves of minced garlic, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Place the peeled and deveined shrimp in a large bowl and pour the garlic butter mixture over the shrimp. Toss to coat the shrimp evenly.
- In a separate bowl, toss 2 cups of mixed vegetables with 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1/2 teaspoon of dried oregano, 1/2 teaspoon of dried rosemary, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 15-20 minutes, or until the vegetables are tender and slightly charred.
- While the vegetables are roasting, place the garlic butter-coated shrimp on another baking sheet in a single layer. Roast in the oven for 8-10 minutes, or until the shrimp are pink and opaque.
