  • Place the peeled and deveined shrimp in a large bowl and pour the garlic butter mixture over the shrimp. Toss to coat the shrimp evenly.
  • In a separate bowl, toss 2 cups of mixed vegetables with 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1/2 teaspoon of dried oregano, 1/2 teaspoon of dried rosemary, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 15-20 minutes, or until the vegetables are tender and slightly charred.
  • While the vegetables are roasting, place the garlic butter-coated shrimp on another baking sheet in a single layer. Roast in the oven for 8-10 minutes, or until the shrimp are pink and opaque.
