  • 1/4 cup of chopped fresh parsley

Instructions

  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Add the minced garlic and red pepper flakes to the skillet and sauté for 1-2 minutes until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Season with salt and pepper. Remove the shrimp from the skillet and set aside.
  • In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.
  • Add the rice to the skillet and cook, stirring frequently, for 2-3 minutes until the rice is lightly toasted.
  • Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  • Fluff the rice with a fork and stir in the chopped parsley. Season with salt and pepper to taste.
  • Return the cooked shrimp to the skillet and toss to coat with the garlic butter sauce.
  • Serve the garlic butter shrimp over the rice pilaf and garnish with additional parsley if desired. Enjoy!
