Ingredients
- 8 oz of fettuccine pasta
- 1 lb of large shrimp, peeled and deveined
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 4 tbsp of unsalted butter
- 4 cloves of garlic, minced
- 1/2 cup of chicken broth
- 1/2 cup of heavy cream
- 1/2 cup of grated parmesan cheese
- Salt and black pepper to taste
- 2 tbsp of chopped fresh parsley
Instructions
- Cook the fettuccine pasta according to the package instructions. Drain and set aside.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the shrimp and season with salt and black pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter. Add the minced garlic and cook for 1 minute until fragrant.
- Add the asparagus to the skillet and sauté for 3-4 minutes until tender-crisp.
- Pour in the chicken broth and heavy cream. Bring to a simmer and let it cook for 2-3 minutes until slightly thickened.
- Stir in the cooked fettuccine pasta, cooked shrimp, and grated parmesan cheese. Toss everything together until well combined and the pasta is coated in the creamy sauce.
- Remove from heat and sprinkle with chopped fresh parsley before serving.
