  • 1 pound of mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together the minced garlic, chopped parsley, chopped dill, olive oil, and lemon juice. Season the salmon fillets with salt and pepper, then spread the garlic and herb mixture over the top of each fillet.
  • Place the salmon fillets on a baking sheet lined with parchment paper and roast in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • While the salmon is roasting, prepare the roasted vegetables. Cut the mixed vegetables into bite-sized pieces and place them on a separate baking sheet. In a small bowl, whisk together the balsamic vinegar, honey, and olive oil. Drizzle the mixture over the vegetables and toss to coat. Season with salt and pepper.
  • Add the baking sheet of vegetables to the oven during the last 15 minutes of the salmon's cooking time. Roast the vegetables for 15-20 minutes, or until they are tender and slightly caramelized.
  • Once the salmon and vegetables are done, remove them from the oven. Serve the roasted salmon with the mixed roasted vegetables on the side. Enjoy!
