Ingredients
- 8 cups of chicken or vegetable broth
- 4 packs of ramen noodles
- 1 cup of sliced shiitake mushrooms
- 1/2 cup of sliced green onions
- 1/4 cup of soy sauce
- 2 tablespoons of miso paste
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- 1 teaspoon of grated ginger
- 1 teaspoon of chili flakes
- 4 soft-boiled eggs
- 1 cup of shredded cooked chicken or tofu (optional)
- 1 nori sheet, cut into strips (optional)
Instructions
- In a large pot, bring the chicken or vegetable broth to a boil.
- Add the sliced shiitake mushrooms and green onions to the pot and let them simmer for 5 minutes.
- In a small bowl, whisk together the soy sauce, miso paste, sesame oil, rice vinegar, grated ginger, and chili flakes.
- Add the soy sauce mixture to the pot and stir well.
- Cook the ramen noodles according to the package instructions, then drain and divide them among 4 serving bowls.
- Ladle the hot broth and mushrooms over the noodles in each bowl.
- Top each bowl with a soft-boiled egg, shredded cooked chicken or tofu (if using), and nori strips (if using).
