Ingredients
- 12 oz fusilli pasta
- 2 cups cherry tomatoes, halved
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the fusilli pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they start to soften.
- Add the cooked fusilli pasta to the skillet and toss to combine with the cherry tomatoes and garlic-infused oil.
- Stir in the chopped fresh basil and grated Parmesan cheese. Season with salt and pepper to taste.
- Cook for an additional 1-2 minutes, allowing the flavors to meld together.
- Remove from heat and serve the Fusilli Genovese with cherry tomatoes and fresh basil immediately. Enjoy!
