Spicy Peanut Fufu with Peanut Soup
Created by: Howcan Team
Ingredients
- 2 cups of fufu flour
- 4 cups of water
- 1 cup of smooth peanut butter
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves of garlic, minced
- 1 scotch bonnet pepper, chopped
- 1/2 cup of chopped cilantro
- 1/2 cup of chopped green onions
- 1/2 teaspoon of ground ginger
- 1/2 teaspoon of cayenne pepper
- Salt to taste
- 4 cups of vegetable broth
Instructions
- In a large pot, bring 4 cups of water to a boil.
- Gradually add 2 cups of fufu flour to the boiling water, stirring continuously to prevent lumps from forming. Cook for 5-7 minutes, stirring constantly, until the fufu is smooth and thickened. Remove from heat and set aside.
- In a separate pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, tomatoes, garlic, and scotch bonnet pepper. Cook for 5-7 minutes, until the vegetables are softened.
- Stir in 1 cup of smooth peanut butter, ground ginger, cayenne pepper, and salt to taste. Cook for an additional 2-3 minutes, stirring constantly to prevent the peanut butter from sticking to the bottom of the pot.
- Pour in 4 cups of vegetable broth and bring the soup to a simmer. Cook for 15-20 minutes, stirring occasionally, until the soup has thickened slightly and the flavors have melded together.
- To serve, divide the fufu into individual bowls and ladle the spicy peanut soup over the top. Garnish with chopped cilantro and green onions. Enjoy!
Fufu, a popular West African dish, is traditionally made with starchy ingredients like cassava, plantains, or yams. Paired with spicy peanut soup, it creates a delightful culinary experience. The history of fufu dates back centuries, with its origins in Ghana and Nigeria. Renowned chefs like Zoe Adjonyoh, known for her modern take on Ghanaian cuisine, have popularized this dish in the UK. In Ghana, the best version of this dish can be found in local chop bars or at the famous Buka Restaurant in Accra. The key to perfecting this dish lies in achieving the right consistency of the fufu and balancing the flavors of the spicy peanut soup. Some alternative methods for making the soup include using groundnut paste or roasted peanuts for a unique twist.
