Instructions

  • In a large pot, bring 4 cups of water to a boil.
  • Gradually add 2 cups of fufu flour to the boiling water, stirring continuously to prevent lumps from forming. Cook for 5-7 minutes, stirring constantly, until the fufu is smooth and thickened. Remove from heat and set aside.
  • In a separate pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, tomatoes, garlic, and scotch bonnet pepper. Cook for 5-7 minutes, until the vegetables are softened.
  • Stir in 1 cup of smooth peanut butter, ground ginger, cayenne pepper, and salt to taste. Cook for an additional 2-3 minutes, stirring constantly to prevent the peanut butter from sticking to the bottom of the pot.
  • Pour in 4 cups of vegetable broth and bring the soup to a simmer. Cook for 15-20 minutes, stirring occasionally, until the soup has thickened slightly and the flavors have melded together.
  • To serve, divide the fufu into individual bowls and ladle the spicy peanut soup over the top. Garnish with chopped cilantro and green onions. Enjoy!
