Vegetable Fried Rice

Ingredients
- 2 cups of cooked white rice
- 1 cup of mixed vegetables (carrots, peas, corn)
- 1/2 cup of diced onion
- 2 cloves of minced garlic
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 2 tablespoons of vegetable oil
- 1/2 teaspoon of sesame oil
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil and sauté the diced onion and minced garlic until fragrant.
- Add the mixed vegetables and cook until they are tender-crisp.
- Stir in the cooked white rice and mix well with the vegetables.
- Pour the soy sauce and sesame oil over the rice and vegetables, and stir to combine.
- Add the scrambled eggs back into the skillet and mix until everything is heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
