  • 2 cups of cooked white rice
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 1/2 cup of diced onion
  • 2 cloves of minced garlic
  • 2 eggs, beaten
  • 3 tablespoons of soy sauce
  • 2 tablespoons of vegetable oil
  • 1/2 teaspoon of sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil and sauté the diced onion and minced garlic until fragrant.
  • Add the mixed vegetables and cook until they are tender-crisp.
  • Stir in the cooked white rice and mix well with the vegetables.
  • Pour the soy sauce and sesame oil over the rice and vegetables, and stir to combine.
  • Add the scrambled eggs back into the skillet and mix until everything is heated through.
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions before serving.
