Instructions

  • Place the cleaned and trimmed chicken hearts in a bowl and pour the buttermilk over them. Let them soak for at least 30 minutes, or up to 24 hours in the refrigerator.
  • In a separate bowl, mix the flour, salt, black pepper, paprika, garlic powder, and onion powder.
  • Heat 2 inches of vegetable oil in a large, heavy-bottomed pot to 350°F (175°C).
  • Remove the chicken hearts from the buttermilk and dredge them in the seasoned flour, shaking off any excess.
  • Carefully place the coated chicken hearts in the hot oil and fry for 5-7 minutes, or until golden brown and cooked through.
  • Use a slotted spoon to transfer the fried chicken hearts to a paper towel-lined plate to drain any excess oil.
