  • Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for 30 minutes.
  • Preheat the oven to 400 degrees F.
  • Season the filet mignon steaks generously with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over high heat until it shimmers.
  • Add the filet mignon steaks to the skillet and sear for 3 minutes on each side, without moving them, to form a golden crust.
  • Add the butter, thyme, and garlic to the skillet. Tilt the skillet and spoon the melted butter over the steaks for 1 minute.
  • Transfer the skillet to the preheated oven and cook for 5-7 minutes for medium-rare, or until the desired level of doneness is reached.
  • Remove the skillet from the oven and transfer the steaks to a cutting board. Let them rest for 5 minutes before serving.
  • Slice the filet mignon steaks and serve immediately.
