- 1/4 teaspoon black pepper
- 1/4 cup heavy cream (optional)
- 2 green onions, sliced (for garnish)
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and cook for 5 minutes, until softened.
- Stir in the minced garlic and grated ginger, and cook for an additional 2 minutes.
- Add the diced sweet potatoes, vegetable broth, ground cumin, cayenne pepper, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the sweet potatoes are tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree until smooth, then return to the pot.
- Stir in the heavy cream, if using, and heat the soup for an additional 5 minutes.
- Taste and adjust the seasoning as needed.
- Serve the soup hot, garnished with sliced green onions.
