Instructions

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together 1/2 cup of crumbled feta cheese, 1/4 cup of chopped sun-dried tomatoes, 2 cloves of minced garlic, 1 tablespoon of olive oil, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • Stuff each chicken breast with the feta and sun-dried tomato mixture, dividing it evenly among the 4 breasts.
  • Secure the openings with toothpicks to hold the stuffing in place.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
  • Remove the toothpicks before serving.
