Family crepes, also known as French crepes, have a rich history dating back to the 12th century in Brittany, France. Originally made with buckwheat flour, these thin, delicate pancakes were a staple in the region. Over time, the recipe evolved to include all-purpose flour, giving the crepes a lighter texture. Today, they are enjoyed worldwide, with variations in fillings and toppings. In Brittany, skilled chefs at local creperies meticulously spread the batter on large, round griddles, creating perfectly thin and lacy crepes. The best version of this dish can still be found in Brittany, where authenticity is key. The key to a perfect crepe lies in achieving the right balance of thinness and elasticity in the batter, as well as mastering the technique of swirling and spreading the batter evenly on the griddle.
