Chicken Fajitas

Ingredients
- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 8 small flour tortillas
- Optional toppings: shredded cheese, sour cream, salsa, guacamole
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the sliced chicken to the skillet and cook for 5-6 minutes, or until no longer pink. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Add the sliced bell peppers, onion, and minced garlic to the skillet. Cook for 4-5 minutes, or until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet with the vegetables.
- Sprinkle the chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper over the chicken and vegetables. Stir to combine and cook for an additional 2-3 minutes.
- Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
- Divide the chicken and vegetable mixture among the warmed tortillas.
- Serve with optional toppings such as shredded cheese, sour cream, salsa, and guacamole.
