  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole

Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the sliced chicken to the skillet and cook for 5-6 minutes, or until no longer pink. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
  • Add the sliced bell peppers, onion, and minced garlic to the skillet. Cook for 4-5 minutes, or until the vegetables are tender-crisp.
  • Return the cooked chicken to the skillet with the vegetables.
  • Sprinkle the chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper over the chicken and vegetables. Stir to combine and cook for an additional 2-3 minutes.
  • Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
  • Divide the chicken and vegetable mixture among the warmed tortillas.
  • Serve with optional toppings such as shredded cheese, sour cream, salsa, and guacamole.
