  • Cut in 1/2 cup of cold, cubed unsalted butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Stir in 1 cup of shredded cheddar cheese, 1/2 cup of grated parmesan cheese, and 1/2 cup of chopped pickled jalapenos.
  • Add 3/4 cup of buttermilk and stir until just combined. Do not overmix.
  • Drop spoonfuls of the dough onto the prepared baking sheet, about 2 inches apart.
