Ingredients
- 4 English muffins, split
- 4 slices of Canadian bacon
- 4 large eggs
- 1/2 cup of shredded cheddar cheese
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions
- Preheat a non-stick skillet over medium heat.
- Toast the English muffin halves in a toaster or under the broiler until lightly golden.
- In the preheated skillet, cook the Canadian bacon for 2-3 minutes on each side until heated through. Remove from the skillet and set aside.
- In the same skillet, melt 1 tablespoon of butter. Crack the eggs into the skillet and cook to desired doneness, seasoning with salt and pepper.
- Assemble the sandwiches by placing a slice of Canadian bacon on the bottom half of each English muffin. Top with a cooked egg and sprinkle with shredded cheddar cheese. Place the top half of the English muffin on top.
- Melt the remaining butter in the skillet and place the assembled sandwiches in the skillet. Cook for 1-2 minutes on each side, or until the cheese is melted and the muffins are golden brown.
- Serve hot and enjoy!
