Ingredients
- 1 large eggplant, sliced into 1/2 inch rounds
- 1 cup all-purpose flour
- 2 eggs, beaten
- 2 cups Italian seasoned breadcrumbs
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves
- 4 sub rolls
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Season the eggplant slices with salt and pepper. Set up three shallow dishes - one with flour, one with beaten eggs, and one with breadcrumbs.
