Eggplant Parmesan Sub
Created by: Howcan Team
Ingredients
- 1 large eggplant, sliced into 1/2 inch rounds
- 1 cup of all-purpose flour
- 2 eggs, beaten
- 1 cup of Italian breadcrumbs
- 1/2 cup of grated Parmesan cheese
- 1 cup of marinara sauce
- 4 slices of mozzarella cheese
- 4 sub rolls
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Season the eggplant slices with salt and pepper on both sides.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan cheese.
- Dredge each eggplant slice in the flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
- Heat vegetable oil in a large skillet over medium heat. Fry the breaded eggplant slices in batches until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
- Spread a spoonful of marinara sauce on the bottom half of each sub roll. Place 2-3 slices of fried eggplant on top of the sauce, then add a slice of mozzarella cheese.
- Place the assembled subs on the prepared baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
