Instructions

  • In a bowl, whisk together 4 large eggs, 1/4 cup milk, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
  • In a large non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are set but still moist, about 3-4 minutes. Remove from heat.
  • Place 2 large flour tortillas on a clean work surface. Divide the scrambled eggs equally between the two tortillas, spreading them out in a line down the center of each tortilla.
  • Sprinkle 1/2 cup of shredded cheddar cheese over the scrambled eggs on each tortilla.
  • If desired, add 1/4 cup of salsa and 1/4 cup of sour cream on top of the cheese on each tortilla.
  • Sprinkle 1/4 cup of chopped fresh cilantro over the fillings on each tortilla.
  • Fold the bottom edge of each tortilla up over the filling, then fold in the sides, and roll up tightly to enclose the filling.
  • If desired, heat a large non-stick skillet over medium heat. Place the burritos, seam-side down, in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
  • Serve the breakfast burritos immediately, or wrap them in foil to keep warm for on-the-go enjoyment.
