Ingredients
- 1 cup of shelled edamame
- 1/4 cup of tahini
- 2 tablespoons of olive oil
- 2 cloves of garlic
- 1/2 teaspoon of cumin
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of chipotle sauce
- 2 large tortillas
- 1 ripe avocado, sliced
- 1/2 cup of mixed greens
Instructions
- In a food processor, combine 1 cup of shelled edamame, 1/4 cup of tahini, 2 tablespoons of olive oil, 2 cloves of garlic, 1/2 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Blend until smooth to make the edamame hummus.
- Spread 1 tablespoon of chipotle sauce onto each tortilla, then spread half of the edamame hummus on top of the chipotle sauce on each tortilla.
- Divide the sliced avocado and mixed greens evenly between the two tortillas, placing them on top of the edamame hummus.
- Fold the sides of each tortilla in, then roll them up tightly to create the wraps.
