Disco Fries, a beloved New Jersey diner staple, originated in the 1970s. These indulgent fries are smothered in melted mozzarella and drenched in rich brown gravy, creating a decadent and satisfying dish. The name "Disco Fries" is said to have been inspired by the late-night club scene, where partygoers would seek out these comforting and filling fries after a night of dancing. Chefs and diners across New Jersey have put their own spin on this classic, with some adding crispy bacon or sautéed onions for extra flavor. Today, the best Disco Fries can still be found in diners throughout New Jersey, where they remain a beloved comfort food.
