Vegetable Dirty Rice

Ingredients
- 1 cup of white rice
- 1 1/2 cups of chicken broth
- 1/2 pound of ground beef
- 1/2 cup of onion, diced
- 1/2 cup of green bell pepper, diced
- 1/2 cup of celery, diced
- 1/2 cup of carrots, diced
- 3 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
Instructions
- In a medium saucepan, bring the chicken broth to a boil. Add 1 cup of white rice, reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add 1/2 pound of ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Add 1/2 cup of diced onion, 1/2 cup of diced green bell pepper, 1/2 cup of diced celery, 1/2 cup of diced carrots, and 3 cloves of minced garlic to the skillet with the ground beef. Cook for 5-7 minutes, or until the vegetables are tender.
- Stir in 1 teaspoon of paprika, 1/2 teaspoon of dried thyme, 1/4 teaspoon of cayenne pepper, and salt and pepper to taste. Cook for an additional 2 minutes to allow the flavors to meld.
- Add the cooked rice to the skillet with the vegetable and meat mixture. Stir to combine and heat through for 2-3 minutes.
- Serve the vegetable dirty rice hot and enjoy!
